I made meatloaf for dinner. I love meatloaf. I love any recipe where I can just kinda throw stuff together. (except I would never put wine in mac-and-cheese, wtf? *g*)

[livejournal.com profile] acostilow made a new recipe sharing community: [livejournal.com profile] nom_in_hell.

Of course, after I joined it, I remember that [livejournal.com profile] phaballa made a recipe sharing community not too long ago: [livejournal.com profile] t_a_s_t_e_y.

So, I'm part of both communities and I'll post to both of them, since they're different corners of fandom. And I'm inviting you to come join and share recipes. (I'm looking for more crock pot / slow cooker recipes! All my cookbooks are in storage, and the crock pot is so nice in the summer b/c it doesn't heat the house up.)

First recipe I'm gonna post: Preacher Cookies

* 2 cups sugar
* 1/2 cup unsweetened cocoa
* 1/2 cup milk
* 1/2 cup margarine (1 stick) or 1/2 cup solid vegetable shortening
* Dash salt
* 1/4 cup peanut butter
* 1 teaspoon vanilla
* 2 cups rolled oats

First take out a nice 2-quart saucepan. In it combine the sugar, cocoa, milk and margarine. Cook and stir the mixture over medium heat until the margarine melts, and the sugar dissolves. Bring the pot to a boil, and reduce the heat slightly. Simmer the mixture for several minutes, until the chocolate forms a soft ball when dropped into a bowl of cold water. This is about 234° on a candy thermometer. Remove the pan from the heat when it reaches the soft ball stage. Add the salt, peanut butter and vanilla. Stir until the peanut butter is dissolved. Finally stir in the oatmeal. The mixture may seem a little runny, but will thicken up as it cools. Drop the mixture from a tablespoon onto a sheet of waxed paper. It should form medium sized cookies. Depending on the size of the cookie, you may end up with as few as 15 or as many as 24.

Me personally, it's usually hit or miss as to whether or not my cookies actually set. But if they don't, we just eat them with a spoon, lol. There's an old wives tale that they won't set if you make them when it's raining; you have to do it when the sun is shining. Idk, I've never paid attention, lol. Hmm, I wonder if we have the stuff to make these; I should totally do that tomorrow.

*sigh* I'm going back to job searching stuff. SO BORING!

My mother sent me a recipe today for chocolate cake that has coke in it. I haven't tried it.

COKE CAKE

2 cup flour unsifted
1 cup butter
2 beaten eggs
2 cup sugar
3 tbsp of cocoa powder
1/2 cup buttermilk
1 tsp vanilla
1 tsp baking soda
1 cup of coke

Combine flour and sugar in mixing bowl. Heat butter, cocoa powder, and coke to boiling. Then pour over flour and sugar mix. Mix thoroughly. Add buttermilk, eggs, baking soda, and vanilla. Mix well. Pour in to a greased 9 x 13 pan @ 350 degrees. 30 - 35 minutes. Ice while warm (allow to cool from hot to warm)

Frosting

1/2 cup butter
3 tbsp of cocoa powder
1/2 cup coke
1 lb 10X sugar
Optional 1 cup of chopped pecans

Heat cocoa powder, butter, and coke to boil. Pour over 1 lb of 10X sugar. Mix well. Add nuts (optional). Spread over cake.

I didn't think so, but you never know, lol. CocaCola is my favoritest drink, I may have to try this out. Dessert + Cake has to equal awesome!

also, when I make icing, I usually mix in the powdered sugar until the icing is the consistency I want instead of going by exactly what the recipe says.

I'm saying that I think someone is seconds away from getting hexed if Snape has a pancake on his head, and I'm curious as to who it is.

Unless it's one of his and Hermione's children, b/c I doubt he'd hex them. :)

I keep trying to see Harry and Draco together... and it just doesn't work.

Now if you'll excuse me, I'm trying to get Petunia to have a believable breakdown. It's a bit difficult, she's a hard character to make real.

Ugh, Petunia. I wanna believe she wasn't always such a horrible person, that there's something redeemable about her, but it just doesn't work.

Harry would like to feel some sympathy for Petunia, he really would, but honestly he just wants to roll his eyes and make a snide remark about how she needs to bloody well grow up. She's selfish and childish and the things she is having a breakdown over are nothing compared to the things Harry has already been through.

I used to make Strawberry Amaretto Cheesecake and Bailey's Irish Cream cheesecakes all the time. YUM. Also, strawberry daquiri cake. :)

I've heard of wine sauces on pasta. I'm not a big wine fan in general, but I suppose if it's a white wine and the alcohol is reduced enough it could work. Maybe.

I'm really starting to get into my new crock pot. This comm, [Bad username or site: @ livejournal.com], has a bunch of really decent recipes. I've made a couple of recipes so far, but I really want to start using it more (the advanced planning and grocery shopping is the hardest part for good ol' procrastinator me). Coming home after a long day to a cooked dinner is the most glorious feeling on earth.

Oh cool, I'll have to check that out! I'm lucky enough that I live in a small town, making a run to the grocery store is maybe a 10 minute deal, lol. But yeah, I think the crock pot is one of the greatest things ever. :)
